Poinsettia Caprese

So I know that we haven’t even put Tom in the oven yet, but Christmas is only 34 days away, not like I’m counting or anything! I know the holiday season is usually jammed packed with work potlucks, festive parties and family gatherings. Don’t you wish Santa could bring us an extra hour each day! Anyways, in the midst of all the chaos, sometimes you need to forget the “made from scratch with love” and just go for easy and get er done! I wanted to share with you a super easy appetizer to keep on hand as the Holiday Season goes into full swing. It’s fast, festive and delish!!

Start by getting the skewer ingredients ready: toothpicks, cherry tomatoes, fresh basil, and pre-marinated fresh mozzarella balls. (I love the Trader Joe’s brand).

Take a mozzarella ball and let the excess oil drain off. Thread the mozzarella ball onto the toothpick. Tear a small piece of basil, fold it a few times, and thread onto the toothpick. (You don’t want the basil piece to be too big to hide the mozzarella and tomato, or too small that you can’t see the green. Once you make a few you’ll be able to tell how many times to fold the basil.) Finally thread the cherry tomato onto the toothpick.

Once you have all of your skewers prepared, arrange them onto a plate, however you’d like; I prefer a circular arrangement. Start by making a circle on the outer rim. Then resting slightly on top of the outer circle, make the middle circle. Finally resting slightly on top of the middle circle, make the inner circle. Finally, drizzle some of the delicious marinate lightly over the entire arrangement. To finish put three cherry tomatoes on top with a large basil leaf sticking out on top, like a poinsettia, get it??
